Father’s Day Beef and Guinness Pie

Father’s Day Beef and Guinness Pie Serves 4, Cooks in 2h 50m, Difficulty Level: Not too Tricky Ingredients: 2 onions 2 cloves of garlic 3 stalks of celery 1/2 bunch of thyme olive oil 3 tbsp of flour 600ml Guinness 450g potatoes 75ml milk 1 tbsp butter
Method:
- Peel and roughly chop the onions, garlic and the carrots. Roughly chop the celery and tie the bay and thyme sprigs together with string.
- Heat the oil in a large casserole pan and over a medium heat add the vegetables and the herbs.
- Cook for 10 mins and then transfer to a plate.
- Toss the beef in flour and season. Add to the pan and cook until browned.
- Deglaze the pan with the Guinness. Add the veg, herbs and top up with water if needed to cover the meat and the veg.
- Cook the potatoes in a large pan and then drain.
- Mash the potatoes with milk and butter
- Preheat the oven to 200C, 400F and Gas Mark6
- Put the meat in the ovenproof dish, top with mash and drizzle with oil
- Bake for 20mins or until golden and crisp.
